Result of multi tasking

Once I get crocheting...I'm hooked into my own cozy world!

Then all of a sudden I smelt something wonderful coming from the kitchen.....  

It occurred to me that I was actually baking a pie. Too late! When I opened the oven...this was the horror I saw..




Took the pie off it's tin...the burned meringue still won't go...no matter what angle I took photo of it... it's still that bad.




But if you can endure burnt bits like my family do.... all was actually perfect inside! We had a yummy pie! 

The ingredients are easily available and procedures were not complicated. So good for someone like me. I'm keeping this recipe here for my next baking day! No, we mustn't give up even though we face failure ;P


Aunt Alma's Coconut Cream Pie

2/3 cup sugar
1/4 cup cornstarch
14 tsp salt
2 cups milk
3 eggs yolks, beat slightly
1 cup coconut
2 Tbs butter
1/2 tsp vanilla
1 baked pie shell

Combine sugar, corn starch and salt into a small pan. Add milk and stir until smooth. On medium heat, cook and stir continuously until thick and almost to a boil. Lower heat and cook 2 more minutes longer, stirring. Remove pan from heat and stir a small amount of the hot filling into the eggs yolks. Add this back into the pan and continue to stir until mixture comes to a soft boil. Cook and stir 2 more minute. Remove from heat and add coconut, vanilla and butter. Stir until the butter has melted. Pour the hot filling into your baked pie shell. Top with your favorite meringue, sprinkle with a little bit of flaked coconut and bake in a 350' oven until a light golden brown.

  1. You really need a timer ! lol A little scrape of that burnt top and I bet it tastes really good ?! ;D

  2. Some people prefer it slightly burnt like that - more fragrant. I'm not into coconut tarts or pies though - don't mind eating but you would not see me buying or making my own. My missus and daughter love them!

    1. Yes maam! Definitely a superb recipe! Did another one yesterday..this time it was perfect! The pie didn't managed to stay long enough on the table...and my family lost control and got so full of the pie, thus ending with no supper that day!! :)
