Sweet Pepper Salad



This wooden bowl that holds my current red and white crochet project goes wherever I go... be it in the garden, in the house, on car trips....but for now, I have to stop halfway because my mind is coming up with another interesting idea of red filled bowl....this time of sweet pepper salad instead.





I like this salad because, with the exception of the vinaigrette, all the ingredients can be grown in my garden. I can pick a few peppers,carrots, herbs... and 30 minutes later have a salad on the table. Food does not get any fresher than that. 


Ingredients
2 tbsp. lemon juice
1/4 tsp. salt
3/4 cup extra virgin olive oil
1 tsp. garlic, minced
black pepper, ground to taste
1/4 cup basil, chopped
1/4 cup parsley
1 tbsp. red wine vinegar
3 red sweet pepper, cored, seeded
1 carrot, washed and chopped




Instruction:

Slice sweet peppers into strips and place in a large bowl.

 Add the herbs and carrots.

Whisk together all the dressing ingredients.

Drizzle the dressing over the vegetables and herbs. Toss to coat.
