Anyone for Scallion Pancake?

Woke up this morning and was greeted by dark gloomy clouds...the sun struggled to come out! Then, the wind picked up and the revenge of autumn full blasted us...even though we prefer a gentle reminder!

No use doing gardening today.. so decided to stay indoor and think about cooking and keeping the tummy warm and full. This is what I came up with.

Searching for ideas is easy. You can get lots of inspirations from food bloggers. mybarecupboard got this scallion pancake recipe which I think is quick and easy to do. Check here. http://www.mybarecupboard.com/2012/07/spring-onion-and-garlic-pancakes.html

Ingredients and instruction are not complicated. It's a pancake where the dough needs a little rest in between, giving you just enough time to prepare other things...

After just a few minutes, I got the dough and mixed it with chopped chives (didn't have scallions), parsley, sweet pepper flakes, garlic, olive oil (didn't have sesame oil) and a bit of salt. No I don't have everything in this house, but it's still OK :)

Rolled it flat and pan fried it without oil as the dough was full of oil. Well, my scallion pancake came out looking more like this (slightly different...) but was delicious!

Since we don't have any cookbooks, nor library to go to, I must say that I really appreciate bloggers for their inspirations for our day to day chores, gardening and cooking ideas and know-how.......afterall, we can't have boiled eggs every single day or could we??....;p

Remain joyful :)

    1. Hi Amy. Thanks for dropping by. Would have been nice if the pancake was with scallion but since we only have chives knocking around some corner of the garden...yes, it was a yummy chives pancake;)
