It's hard to find a decent mayonnaise in the shop....most of the time, we end up using yogurt as a replacement. But recently, I've realised that I can make my own homemade mayonnaise, especially as we get very fresh eggs straight from our chooks :)
So, here I am...whipping up my own mayonnaise. Here's the recipe:
In a bowl, add 2 egg yolks, 1 tsp dijon mustard, salt and pepper to taste. Whisk together until egg yolks have thickened slightly.
Whisk in 150ml olive or sunflower oil. Just a drop at a time at first, till mixture is thick. Then, add 2 tsp of white wine vinegar or lemon juice. Add sugar to taste if you like. Serve at once or chill. This makes 200ml of mayonnaise.
To make the potato salad, here's how: Boil some potatoes, chopped up some sweet pepper, onions, chives, celery, and mixed in some shredded cooked chicken meat.
Mix in the homemade mayonnaise, some salt and pepper....
Tadah! And we're ready to enjoy a delicious chicken potato salad with homemade mayonnaise. It's nice warm or cold..!
