Simple and Quick Meal - "that we like"!

When you are can't spend time in the kitchen, but you also know that your family's tummy are all groaning in silence...What quick meal do you prepare?


Menu for the day: 
Rocket Leaves Salad with balsamic & olive oil dressing
Sunny Side up Eggs with a "tall order"
Pan fried Cube Potato


The Rocket Leaves are from our kitchen garden.
Pick, wash, dry and sprinkle in some balsamic vinegar and olive oil = Lovely Salad.

The fresh eggs are from our feathered ladies who live next to our barn.
We prefer the egg whites cook to a crispy bite or for some of us "burnt", even better.... but the egg yolk must be a bit runny.

Potatoes are from the storage room. They were a summer gift harvest from our neighbour. Here's the recipe:
15 baby potatoes, peeled and cubed
Red Chili Powder 1 tsp
Coriander Powder 1 tsp
Salt 1 tsp
Mustard 1/2 tsp
Oil 2 tbsp

Directions:
Chop the potatoes into small pieces.
Heat the oil in a pan, add mustard. When the mustard splutters , add chopped potatoes, red chili powder, coriander powder and salt. Fry in in Medium or low flame for 10 15 minutes till the potatoes are cooked.

Cook in low flame to get the potato soft and if you want it to be crispy, increase the flame at the end of cooking time but be careful not to burn the bottom.
