Shopping Based On Guessing


Dear Family & Friends

Perhaps you don't do this...but I found myself guilty. Sometime ago, during our grocery shopping time, I found an item on the shelf without even knowing what it really is, bought and paid for it with the hard earned shillings of my husband!




Well, my excuse was: I thought I guessed what it was. What attracted me was this sign "non GMO"...This gave me some sort of nice assurance in what I'm going to feed the family.

It has been sitting on my kitchen shelf for a few days, and it puzzles me to watch it staring back at me. So, I settled the matters by searching on computer for some help. I realized that it is actually "semolina".  I'm sure I have eaten them before but never ever cooked it  myself. So, pardon my ignorance!

And here's the Greek Semolina Cake recipe:

½ cup butter
1 cup semolina
1 cup sugar
2 cups water
½ cup almonds/walnuts or pinenuts
½ cup of raisins or currants
Grated orange rind
½ teaspoon cinnamon
¼ teaspoon cloves


Preparation
Melt butter in a heavy based saucepan. Add semolina and stir until golden in colour. This may take a few minutes. Add the spices, nuts, dried fruit and sugar.

Pour in the water and stir until the mixture starts to thicken and come away from the sides of the saucepan.

Pour into a mould or glass bowl and cover until cool and set. (The steam will help release the cake from the mould) Then turn onto a cake plate and serve.

The recipe is an "Easy Peasy one" right? I didn't have all the ingredients like raisins and nuts ready on hand...but even without them, it was delicious.  (Next time I must not snack on every raisin and nuts!!)  The kitchen ended up smelling so deliciously good too with the spices!  Well, I enjoyed cooking this cake and we all enjoyed eating it too. So, I've got to share this with you.



My little kitchen assistant moulded the cake in a teddy bear pan, and I did mine on a bundt pan. It was good fun, for the cake just jumps out of the pan so easily afterward. Yes, they so wanted to please our tummies:)
