What would you do if you haven't visited your garden for a day or two...and come back to discover that the courgette has grown into a Monster!
Well, not to worry...it's time to make stuffed courgette:) As this is about the size of a baby... we had to cut it into quarters... ..probably slightly bit too much for the four of us!!
Hollow the courgette to make it like a boat so we can fill it up later.It might look so big, yet the inside have not developed into seeds yet....maybe...its just all the rain water!
Place the courgette into a baking pan...and start preparing the stuffing of your choice. Here's the filler recipe ingredients we did:...
2 tablespoons olive oil
1 large onion, finely chopped
2 garlic cloves, finely chopped
3/4 lb ground beef chuck or ground lamb (not lean), or chorizo sausages
1 teaspoon ground allspice
2 teaspoons salt
3/4 teaspoon black pepper
2 cups diced tomatoes including juice
1 cup chicken stock or broth
Heat oil in a deep skillet over moderately high heat until hot, then sauté onion, until golden, 6 to 8 minutes. Stir in sausages or minced meat to cook for a few minutes till brown. Add the polenta, garlic, allspice, tomatoes with juice, stock, pepper (I also mixed in some chopped sweet pepper) and bring to a simmer. Cook till polenta is cooked through.
Now we can fill up our courgette with it.
Line it up with some cheese and bake it in a preheated oven 180C for 30 minutes.
All done...!! It was a very big portion for me...so I shared some of it to the chickens... but really, we do love stuffed courgette...I must not let them grow that big next time...but this just shows that sometimes, I'm not very good in playing hide n seek game with the veggies in our garden :)

DeleteWoah ! That's one huge specimen :D I bet it can feed another family ! Love the look of that soon to-be baked stuffed courgette , the cheese is such a yummy addition !
ReplyDeleteAnne, I love how you termed it as one huge specimen :D It was indeed! I don't think I will cook that size of stuffed courgette again unless we get extra people to help us eat:)
